A pork loin is not the same as a pork loin. The answer is really simple, the key to a perfect pork tenderloin is to make sure you don’t overcook it.Many of us grew up in a time when our parents cooked all kinds of pork until it was tough as leather.
Today, pork is safe to eat cooked to medium heat (145°F), leaving it slightly pink in the middle and tender and juicy. Serve this with Perfect Mashed Potatoes and Easy Roasted Asparagus.
Tips for perfection
• Cook at a high temperature so that the exterior has a good color and flavor.
• Brush with olive oil and fresh herbs and spices on the outside before cooking.
• Use a thermometer to get the perfect temperature.
• Let your meat rest before carving.
• If you are cooking pork tenderloin medallions, fry or grill them for a few minutes on each side.
• Don’t overcook. Pork tenderloin is very lean if overcooked it can dry out.
I can’t stress this enough, using a thermometer is really essential for perfection! If you don’t have one, this is a very small investment to ensure the best cooking of not just pork, but many types of meat!I have a digital thermometer where you insert the probe into the meat (this one gets great reviews and is inexpensive), then a cable connects the probe to the digital display.
Don’t worry, the oven door closes well with the cable sticking out.

When roasting pork tenderloin (or pork chops), it should be roasted to a juicy, tender temperature of 145°F. Roasting pork tenderloin at 145°F is medium doneness, which means it will be a little pink in the means, medium.
Anywhere between 145°F and 160°F is fine, however cooking it further towards the middle (145°F) will produce much juicier meat. Always remember to let the meat rest for about 5 minutes before cutting it.
